What can I say? If Julia Childs is the high priestess of French cooking, the Paul Bocuse is Zeus! Think about it people, this chef actually has an airport named after him. So, the first part of the book is about how to make various sauces....I swear to you that I am an adequate amateur french cook....but I did not even know 1/3 of the sauces presented in the first chapter. Paul is the grandfather of modern french cuisine.....this is a worthy read. Pay close attention in buying this book to shipping costs.....if not, you might get stung! PS for fun, here is a little quote from Monsieur Paul "If an architect makes a mistake, he grows ivy to cover it. If a doctor makes a mistake, he covers it with soil. If a cook makes a mistake, he covers it with some sauce and says it is a new recipe."

Incredible cookbook that mainly teaches technique. From how to clarify butter to how to filet a fish, this book shows all with easy to follow images and text. Many of these techniques are highly advanced while others are simple.

I haven''t tested all the techniques and recipes but have already found errors and downfalls to the instructions. The fresh pasta recipe is flawed; it gives simple instructions and tells how much flour to use by weight and how many eggs to use. But eggs vary in size, is the recipe for XL eggs or regular eggs? What do you do if the dough isn''t the right consistancy? How can you even tell if the dough is the right consistancy? You''ll have to use prior knowledge or look it up.

Another warning about this cookbook: The recipes are complicated. You need ample cooking resources and high quality materials to accurately follow the recipes. I don''t think this book is worth it if you don''t have the high quality cooking supplies needed to recreate recipes that are truly works of art.

If you have the resources and you are serious about stepping up your French cooking skills, then this book can be very helpful.

I saw the other reviewers complaining this was for beginners, and the step-by-step, so I hoped it''d be like my other beginner''s cookbooks. They are like cooking self-study textbooks with recipes to back up the techniques it just described. I was hoping it''d be a solid jumping off place into fancy cuisine. If not, then I hoped for a French cookbook.
It was mostly learning how to prepare things to be used, then a couple recipes using those skills (expect typically you purchase the thing already "prepared" at the store), but they weren''t skills a home chef needs typically, unless you farm/hunt your own ingredients.
The Chef''s section then was where the great things were. Only issue is, those complex recipes are NOT dragged on or described in detail at all... Many of the ingredients are also very difficult to get, so no room for error.
However, if a Michelin Star restaurant employee is your goal in life, this could be a good book. Learning how to filet an entire tuna or butcher your own meat is useful then. The section aimed at the table service was also just interesting to read. Not for me, but very high quality. I found my niche in The Silver Spoon and tons of trial and error (hundreds of recipes, but only a few cheap ingredients). PS, not bright blue like in picture, very dark blue.

I also like to order home chef food boxes but I never could repeat recipes because most of the time they uses chicken or beef demi glasses and I couldn''t find how to make it or where to buy. How surprised I was to discover demi glasse cooking instructions in this book. I am so happy I got it.
Book has awesome quality pages with great pictures. Mast have for your culinary books collection

This is one of my treasures of the 20+ cookbooks I own. It’s like a crisp glass of wine. Lovely in every form. I love the simple explanations with each section. It leaves you with an open view of what do with imagination. As is said, “POWER TO THE IMAGINATION.” “Once we have grasped the fundamental rules, we can use familiar recipes to dream up our own.” This is the secret to a treasure, like learning to walk or riding that bicycle all alone. This book has sections on eggs, meat, paltry, vegetables etc and each section gives step by step instructions from things as easy as boiling an egg through to more difficult processes like boning a shoulder of lamb. There are recipes for all kinds of stock and sauces, instructions on how to bone meat and poultry and boning and filleting fish; it''s the perfect beginners guide on how to cook. The final section provides a range of great menus for a dinner party with dishes of various skill level from moderately difficult to very skilled. You will learn so much more then any chef or school can teach you. Seriously, this is a must for chefs. Make yourself proud of the knowledge you will acquire with this book. Been a chef for 4 years and i have learned more in this book then in my 4 years with all the chefs above me. Do you want to be kitchen ready? I suggest you get this book and start educating yourself as this will make you a better chef.

This is not a book, it is a lethal weapon. About the weight of a housebrick, and as lethal as a kitchen knife if dropped on your foot, this "book" is not something you really want to keep in your kitchen. It is far too beautiful for that, and you would not want to ruin the high quality glossy pages with raw ingredients. Written very much from the discipline of classic French cookery, this is not really a cookbook. While there are quite a few recipes, the majority of this volume focuses on technique. This is immediately clear as the opening chapter starts with the classic mother sauces and more besides. As you go through the book, you progress to more and more complex tasks, including filleting fish, jointing meat etc. through to laying a table and pouring wine. Visually, the photography and layout is stunning, and it is obvious the author is a passionate chef. The writing style is clear but authoritative, and inspires confidence in the reader. Tasks are graded with a difficulty rating which is a great touch for those on a learning curve. If you are after a book that teaches you everything you need to know in the kitchen, albeit from a French rather than an International perspective, look no further. You will treasure this book the more you use it.

Other reviews of the e-book version have been critical of the way in which the translation to Kindle format has been carried out and, in many ways, that criticism is wholly justified. In my view, unless you are using a colour renderer (Kindle Fire, PC, Kindle Reader on a tablet) a book like this is really going to be a poor candidate for the Kindle. On the other hand, if you have access to a decent screen ( I have used it on an 8" tablet, and on a 15.5" laptop, from which the screen grab attached derives), the book is useful, navigable - the links in blue all work and some of the beauty remarked on regarding the print edition comes through. Since it is, in the main, a book about techniques (the leg of lamb example in my photo being typical) I didn''t find the layout difficult to use. On the tablet, the pages render as single, on the PC double and there seems to be no control to change this in either case. Because it is mostly a set of scanned quality colour images, including the text, there is no control over the font.
